It’s a Winner – Cheesecake with Florida Grapefruit

Peter Morrell samples the winning recipe from the recent Florida Grapefruit competition.

Florida grapefruit recently teamed up with celebrity Master Chef winner, Lisa Faulkner, to offer one lucky family the chance to win an all expenses paid trip to London to take part in an exclusive, personalised cookery master class with Lisa herself.

Aspiring chefs were invited to create their own culinary masterpieces for Lisa, one of the UK’s most loved gourmet chefs. Budding cooks simply had to submit their best dishes via Florida grapefruit’s Facebook page and encourage their friends and family to vote!  Lisa picked just one lucky winner from three finalists who won this once-in-a-lifetime celebrity master class whilst picking up some culinary top tips!

Recently Cucina Caldesi, the culinary school in London’s Marylebone, was the venue for the winner of the competition to present her recipe, Florida Grapefruit, honey and ginger cheesecake. Lisa had also devised a starter of salmon and cucumber with a Florida grapefruit dressing and a main course of a smoked chicken, avocado and Florida grapefruit salad to create a comlete meal.

I was there to see Lisa and the winner who were both charming and engaging presenters, magic up the food which featured fresh, light and healthy ingredients with lots of different tastes, flavours and textures.

The proof of the pudding is, as they say, in the eating and the entire meal both looked and tasted delicious, both punchy and subtle at the same time. I particularly liked the salmon which had been cured, ceviche style, by the grapefruit juice and lifted by the slivers of cucumber, niftily produced by Lisa with a potato peeler, a handy chef’s tip.

Thanks to the climate and perfect growing conditions, Florida grapefruit are much sweeter than their Mediterranean cousins and are also juicier, containing over 10 per cent more juice than grapefruit grown in dry desert conditions.

They will also help make you look and feel better. For slimmers they only contain 60 calories per half fruit and are fat-free. And if you want to keep free from summer colds then the vitamins, iron and essential anti-oxidants in the grapefruit will help give your body a much needed boost.
