On Tuesday 22 July, Brigade Bar & Bistro, London Bridge hosted an inspiration morning with demonstrations and a Q & A session from members of Le Club des Chef des Chef in support of hospitality charity,Beyond Food Foundation. Apprentice chefs at the London Bridge social enterprise, bar and bistro had the once in a lifetime opportunity to learn from the experts who are considered to be chefs to the world’s most powerful.

Le Club des Chefs des Chefs, an exclusive gastronomic club, the members are the current personal chefs of heads of state such as President Obama. Mark Flanagan, chef to Her Majesty the Queen of the United Kingdom and club vice-chairman, will be leading the club’s first visit to London since it was founded in 1977 and organising a schedule to highlight Great British produce, culinary traditions and the art of entertaining.

The breakfast included demonstrations from world class Chefs who represent Her Majesty the Queen, President Obama, Crown Prince of Monaco and the former chef for Nelson Mandela, with the aim to inspire Beyond Food Foundation apprentices past and present. After the demos the students were invited to a Q and A session, allowing further insight into the chefs’ cooking expertise.

Simon Boyle, chef founder of The Brigade and founder of Beyond Food Foundation, comments, “The Beyond Food Foundation are thrilled to have members of Le Club des Chef des Chef supporting our apprentices’ training. With the many diverse specialties that the UK has to offer, there’s no doubt that this will be an inspirational experience for our team.”

The Beyond Food Foundation works with people who have been at risk of or experienced homelessness to motivate and inspire them to gain meaningful employment. Since September 2011, Beyond Food Foundation has worked with over 450 homeless clients throughout Freshlife; a 6 week programme of inspirational food related workshops aimed at providing people with core employability skills, health and well-being workshops and basic cookery skills. It has also recruited over 60 apprentices to join its United Kitchen Apprenticeship programme at Brigade. As part of the United Kitchen programme, apprentices work full time as Commis chefs within Brigade, work towards an NVQ Level 2 in Professional Cookery and receive holistic support through a mentoring and employability programme as well as 1:1 support from Beyond Food’s Chef Trainer and Support and Progressions Manager. These life changing opportunities provide the qualifications and personal mentoring necessary to ensure apprentices are able to find sustainable employment in the future.

De Vere Venues, the UK’s number one provider for meetings, trainings and conferences, joined forces with PwC and Beyond Food Foundation in 2011 to launch Brigade Bar & Bistro. It was born out of Simon Boyles’s realisation that there are not enough inspirational projects aimed at supporting homeless people to end the cycle of ‘no job – no home’.

Brigade works as a Social Enterprise that uses Simon’s food philosophy in the open plan kitchen bistro, private dining rooms and cook school to inspire both the guests and the apprentices alike. The restaurant uses fresh seasonal and local produce alongside British classics to create inspiring menus.

Brigade is based at The Fire Station, Tooley Street. The Fire Station was built in 1879 to save lives and protect properties following the devastating Tooley Street Fire of 1861,leading to the creation of the first London fire brigades. Today, Brigade uses the same values of business sense and social responsibility to make it a vibrant and authentic venue. This meant a fresh start in 2011, for this historic building, creating open kitchens in the Bar and Bistro, a Cookery School and Private Dining rooms.
